越南春卷 - Kaspar's Spring Rolls with Miso Aïoli (20 pieces)
Ingredients:
• ½ red bell pepper
• ½ medium zucchini
• 1 medium carrot
• 1 cup cooked rice noodle (粉丝)
• 2 tablespoons lemon juice
• 1 tablespoon fish sauce
• 1 tablespoon sugar
• 20 six inch diameter round rice spring roll wrappers
• 20 mint leaves(一定要加,味道好很多)
Preparation:
• Cut vegetables in fine julienne strips and place in a mixing bowl.
• Add the noodles, lemon juice, fish sauce and sugar. Mix well.
• Let mixture marinate for 10 minutes
• Fill large bowl with hot water.
• Cover work surface with dry towels.
• Lay the wrappers on top of the towels.
• Place spring roll wrappers in the water for about 15 seconds or until wrappers are slightly pliable.
• Place a mint leave o the side of the wrapper.
• On the opposite side of the wrapper, place the marinated vegetable mixture.
• Repeat this process with the remaining mints and vegetable mixture.
• Fold each side of the wrapper into the center to tough each other.
• Repeat with the remaining rolls.
• Starting with the vegetable side of the roll, begin rolling up the spring rolls.
• Repeat the rolling process with the remaining rolls.
• Cover them with a wet towel and plastic wrap to avoid drying out.
Miso Aïoli
Ingredients:
• 3 tablespoons plum sauce
• 2 tablespoons Hoisin sauce (海鲜酱)
• 1 and ½ teaspoons garlic, chopped
• 1 and ½ teaspoons sambal
• ¼ cup cilantro, roughly chopped
• 1 and ½ tablespoons Miso paste
• 3 tablespoons sake
• 1 cup mayonnaise
Preparation:
• Place all ingredients except mayonnaise into food processor and pulse until finely chopped.
• Add mayonnaise and mix with a whisk until well incorporated.
