海贫菜谱 - 希腊菠菜派(Spinach Pie-Spanakopita)

原来的菜谱是文学诚私房小菜的. 我在用量上稍微改了下, 其他都照抄.

Greek Spinach Pie with Lebanese Style Filling

原料:
2磅新鲜菠菜, 洗净切碎
1杯切碎的洋葱,预先用少许橄榄油炒熟
1 1/2 小勺盐
1/4 小勺胡椒粉
1/8 到 1/4 杯柠檬汁
1/4 杯橄榄油(加入馅里)
1/3 到 2/3 杯松子, 预先用少许油低温炒熟,置凉待用。(松子很容易焦, 要小火小心翻炒)
1/3 到 2/3 磅 feta cheese, 切碎 (如果你买的feta cheese比较咸,前面提到的盐可以酌减)
1包phyllo pastry (西人超市的冷冻柜有卖)
另橄榄油一小碗, 刷phyllo用

Filling:
• Wash, drain and chop fresh spinach. Add salt to chopped spinach, and let sit for 20-30 minutes, until water collects.
• Lightly squeeze out water, and place in large bowl.
• Add sautéed onion and optional pepper to spinach.
• Mix well and let stand a few minutes.
• Stir in lemon juice and oil.
• Add crumbled feta cheese to mixture.
• Immediately before assembling pies, add browned pine nuts.

Pies:
• Open up the filo pastry and place on a work surface. Cover with a damp cloth. Continue to cover the pastry sheets each time you remove one as you prepare the pie.
• Brush each filo layer with a little olive oil.
• Brush the baking pan with olive oil.
• Place spinach mixture in center of each piece of fillo pastry and fold.
• Bake at 375 degrees F for 12-15 minutes, until brown on top and bottom.

步骤图:
• 取一张phyllo,刷层薄薄的橄榄油, 1/3处朝中间叠一, 再把剩下的1/3也叠过来
• 放上馅, 包成三角型
• 剩下一点边正好折起来封口。
• 烤盘里预先刷一层薄油,放好菠菜派后再在派的表面刷层薄油。放烤箱里375 F 烤12-15分钟。

Notes:
1. 这个菜谱太多了, 我只用了一半.
2. 1包phyllo pastry里面是两个包装, 每包二十四张
3. 我的烤箱温度比较高, 370F烤了12分钟.
