一回家就搬出我尘封已久的Cake Bible,然后开始练习打字:
 
Zucchini Cupcakes
 
Make 14-16 cupcakes
 
Ingredients:
 
Cake flour 170g
Baking Soda 1 tsp
cinnamon 1 tsp
powdered giner 1/2 tsp
ground cloves 1/4 tsp
salt 1/4 tsp
corsely chopped toasted walnuts 75g
2 large eggs
light brown sugar 163g
safflower oil 1/2 cup (107g)
grated zucchini 227g
optional: raisins 72g
 
Preheat the oven to 350F.
 
In a small bowl combine the flour, baking soda, spices, and walnuts and whisk to blend.
 
In a mixing bowl beat the eggs, sugar, and oil for 2 to 3 minutes or until very smooth. Add the zucchini and beat just until smooth. Add the dry ingredients and optional raisins and beat until completely moistened.
 
 
Scrap the batter into the prepared muffin tins, filling each cup 3/4 full, and bake 20 to 25 minute or until a cake tester inserted in the center comes out clean. Cool in the pan on a rack for 5 minutes. Unmold onto the rack. cool and wrap airtight.
 
提醒一小点,为了受热均匀,烤模进烤箱以前空的那些cup里面每个来2-3 table spoon的水。
