知道知道,夏天已经过去了.
沙拉是两周前做的.那天冰箱里有西瓜,再加上秋老虎刚好出来遛弯,于是就做了这个
清凉的夏日沙拉.

本来我去那里转悠,是为了学习图片的,可是,这个简单的沙拉,在味觉上,却带给了我
意想不到的惊喜.
酱汁真是太赞了, 配上西瓜还有番茄的质地和薄荷清香,非常完美.
酱汁的做法:
半杯葡萄甜醋,1/3杯蜂蜜,1/4杯白糖,中火,边加热边搅拌,直到有些粘稠,关火,此时
体积大约缩小到一半的样子.
西瓜(要无籽的小西瓜最好),西红柿切块(我还加了几粒美国樱桃),加上薄荷叶,橄
榄油,一点点盐,搅拌一下,然后洒上奶酪粒(应该是feta cheese, 我家里没有,就用了
goat cheese),上面提到的酱汁. 酱汁不必都用了,我觉得可以根据自己的口味决定
.我其实只用了不到1/4配方的酱汁,觉得已经够了.
Matt’s Refreshing Watermelon and Heirloom Tomato Salad
Serves 4
1 small seedless watermelon, peeled and cut into small chunks
2 heirloom tomatoes, each cut into 8 wedges
1 tablespoon mint, minced
1 tablespoon extra virgin olive oil
1/4 cup feta cheese
salt to taste
honey-balsamic glaze:
1/2 cup balsamic vinegar
1/3 cup honey
1/4 cup granulated sugar
For the honey-balsamic glaze: Place all the ingredients into a small saucepan
and cook over medium heat, stirring occasionally. Allow the mixture to reduce
by half, remove from heat and cool.
Place watermelon, tomatoes, mint, and oil in a bowl and gently toss together.
Season with salt. Portion the salad onto four plates and top each with
a crumbling of feta and a drizzle of glaze. Serve.
